Ingredients
1 medium acorn squash (halved, seeded, and roasted)
1 lb lean ground beef
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon black pepper
1 tablespoon olive oil
1/2 cup diced tomatoes (canned or fresh)
1/4 cup chopped fresh parsley or cilantro

Instructions
Preheat the oven to 400°F (200°C).
Drizzle squash halves with olive oil, season with a pinch of salt, and roast cut-side down on a baking sheet for 30–35 minutes, until tender.
Heat a skillet over medium heat and add the ground beef, breaking it up with a spoon.
Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 3–4 minutes.
Stir in ground turmeric, ground cumin, paprika, black pepper, and sea salt. Cook until the spices are fragrant.
Add diced tomatoes to the beef mixture and cook for an additional 2–3 minutes until warmed through.
Remove the squash from the oven and flip cut-side up. Spoon the spiced beef mixture into each squash half.
Return to the oven for 10 minutes to meld flavors and finish heating.
